LoBo is one of my dearest friends. And she is fierce in the kitchen. This was one of our “let’s-invite-a-ton-of-people-over-last-minute-and-feed-them-but-we’re-broke-college-kids” staples. And taco soup became a fan favorite. It still is.
1 lb ground beef
1 large can of tomato sauce
1 large can of light red kidney beans
1 can of petite diced tomatoes
1 can of black beans
1 can of corn
1 packet of original taco seasoning
1 sweet onion
Corn bread on the side
Brown the ground beef, strain some of the fat once browned. Dice onion and saute using vegetable oil. Place ground beef and onion into soup pan and mix in remaining ingredients. Heat on the stove until warm. Serve with optional toppings and with a side of corn bread if desired.
